Beetroot Salad in Coco Greek yoghurt dressing


1 big or 2 small cooked beetroots in small dice
1/2 red onion in small dice
1/2 red apple in small dice

coco yoghurt dressing:
3 ss coco Greek style yoghurt (regular is also good)
juice from 1/2 lime
pinch cilantro powder
Himalaya salt to taste
fresh leaf parsley

Start with combining all the ingredients for the dressing in a medium size bowl.
When the dressing is ready, dice the beetroot, onion and apple and add to the bowl of dressing.
Garnish with fresh leaf parsley and nigella seeds or black sesam seeds.

For optimum flavor and heightened taste, let rest in refrigerator for minimum 30 min.
